Soy Glazed Flank Steak with Zoodles

  1. In a small saucepan, heat the oil.
  2. Add the garlic and ginger and cook over moderately high heat, stirring occasionally, until the garlic begins to turn golden.
  3. Add the soy sauce, sugar and crushed red pepper and cook, stirring, until syrupy, about 3 minutes; let cool.
  4. Lay the flank steak on skillet or griddle. Grill the steak for 3-4 minutes per side; during the last minute, brush all but 2 tablespoons of the glaze over the steak. 125F for rare - 130F for medium rare - 135F for medium. Transfer the steak to a cutting board and let stand for 5 minutes. According to foodsafety.gov, the minimum safe temperature is 145°F for fresh beef and 160°F for ground beef.
  5. Cook zoodles according to package instructions
  6. Thinly slice the steak against the grain and brush with the reserved 2 tablespoons of glaze.
  7. Transfer to plates, sprinkle with scallions and serve with lime wedges.
