In a large skillet, heat 1 Tbsp vegetable oil over medium heat.
Slice flank steak into ½ inch strips. Be sure to slice the meat against the grain.
In a small bowl, toss the flank steak strips and corn starch together until the flank steak is well coated, then place the meat into the warmed skillet and brown on both sides until meat reaches internal temperature of 145 degrees Fahrenheit. (3-5 minutes). Remove meat once it is done cooking.
In the same skillet add the broccoli florets, minced garlic, and the low-sodium beef broth. Cover the pan, cook over low, and steam for 10 minutes or until the broccoli is slightly tender.
While the broccoli steams, whisk the soy sauce, brown sugar, and 1 Tbsp of corn starch together in a small bowl.
Add the soy sauce mixture and the cooked flank streak strips back to the pan with the broccoli. Stir until well combined and simmer on low for 3 minutes or until the soy sauce thickens.
Serve the stir-fry over brown rice, ramen noodles, or on its own!
